I saw a similar one for coconut flour bread 2tablespoon coconut flour
1egg
1/4 teaspoon baking powder
1 tablespoon coconut milk or milk
1 tablespoon olive oil
Pinch of salt
Mix all in a bowl then put into a Chinese takeaway container. Tap container a few times on worksurface to get any air bubbles out then microwave for 90seconds. Fry for 30 sec for crispy bread (optional)

yep. I put a little vanilla in one batch -- but it was better without lol.
The wife and I discussed using spices and herbs yesterday for the next time we make it. You can tell it isn't store-bought white bread, but aside from being a little eggier and chewier, it's probably the best sandwich bread alternative I've seen. Also consider that this is a bread you can mix up in a minute and a half, then microwave in another minute and a half lol.
for nigh perfect sandwich bread, I use my daughter's portioned plate. It's one of those little square ish plates with the more or less square divided areas. a single batch fits just right in two of those squares :D

and it's definitely keto friendly. I had a sandwich for lunch and a sandwich for supper. only 2% of my diet yesterday was carbs, for a whopping 10 grams, 5 of which was fiber.
