While I know that I won't (nor is it healthy to) lose 5 - 6 lbs every week, I am getting a little discouraged at the number on the scale. I'm happy that official weigh in is not until Monday. I had a little more time this morning before work so I changed up my breakfast. It makes since that if your body gets used the same exercise day in and day out, then it must get used to the same fuel. Thoughts?

Look at your chart. You are losing fine. Keep your expectations realistic (a couple pounds a week is normal for most of the population). Just keep going.
