Looks delicious! If you don't mind me saying so - I think your calories are too low (if your food diary is accurate). If I were you I would double your intake to 1600 calories and then see how weight loss goes before lowering it if needed. Your body needs fuel to function and especially on a vegan diet you need to eat a variety of healthy fruit, veg, nuts, pulses, etc. to try to get all the nutrients needed. You might want to take a multivitamin as well and make sure it contains B12. All the best!
