I love what I learn from my buddies here on FS. I've implemented several of the ideas my friends here have shared. Today I enjoyed such a variety in my menu. For example, I started the day with some flaxmeal pancakes that were scrumptious. I've made the Muffin In a Minute before, but have never tried the pancakes. Jim and I topped ours with a bit of sugar-free syrup and some whipped cream. We found it to be a very satisfying meal and a quite welcomed change from our standard eggs and turkey bacon or my egg souffle' or quiches that I regularly make. Dinner tonight was marvelous - I fixed a chicken and veggie stir-fry, seasoned with soy sauce (0 carbs) and garlic powder. It was colorful and delish. Btw, I learned something recently that was amazing. Did you know that 'baby corn' is free of carbs/startches because the mini cobs have not grown into maturity at which time the high carbohydrates come into play? Our stir fry was so colorful with a variety of low carb veggies.

Furthermore, another buddy recommended Soy Slender low-carb chocolate soymilk. I had some this evening for a treat - it was yummy. Such a great substitute for the always-loved but seldom-indulged chocolate milk. I found some at Kroger in the health food section for anyone who wants to try it. I am happy to report that I found the carbmaster yogurt (thanks Stef!) for which I was so happy. I had honestly stopped going over to that section of the dairy sometime ago because of the high carb content of standard yogurts - Although I loved them as a snack, I just did not want all the carbs. When I began this WOE I just avoided the yogurt aisle alltogether.

Yay - I found the Torani syrup ya'll recommended at WM. They were out of the vanilla so I picked up the Hazlenut that Vackerman suggested. (Thanks!)

Here's to a mix-it-up, have-some-fun-with-your-food kinda day! Even with ALL the awesome veggies I had for lunch and dinner, I still reached my 20 net carbs today. Love it that I had so much good fiber! Hope your day was as delicious as mine!

here's what i came up with: 4 T flax meal, 2 T half & half, 1 tsp splenda, 1 large egg, 1/2 tsp cinnamon, 1/2 tsp vanilla extract (not imitation), 1 tsp baking powder, 1/4 tsp basking soda. i got 3 nice sized pancakes so based on that there is only 3.74 net carbs. i'm stuffed!!

Had a great time, Evie. Had a nice dinner and played some pippers (dice game often called f..ar..kle[had to put the periods in as FS sees that as a curse word, lol], but back in the 80's it was called pippers, lol) and rummy.

Evie, sounds like a wonderful food day. Had no idea, that the baby corns had no carbs, what a great addition to stir-fry, will make that this week. I have yet to experiment with Flax Meal or Almond Flour, but the thought of a pancake really need to venture out in my food choices.,,,thanks for posting. I was looking for the SF Torani and Publix, and didn't find it, will check out Walmart, hopefully, can find some. Have a wonderful evening.

Hi Deborah - I found the Torani at WM in the coffee aisle. The Flax and Almond flour are found in the health food section of either WM or the grocery store. Happy hunting!

Hope you enjoy the hazelnut syrup as much as I do. I mix one serving of that with powdered espresso and a little water then fill the rest with milk of your choice...YUM!!!

@sophie99, I tried your flaxmeal pancake recipe this morning & LOVED IT! I added a little sugar-free maple syrup which added a couple of extra carbs & 1/2 oz of chopped pecans. DELICIOUS. Thanks so much!!!

yay! glad you liked it :) i use an imitation sugar-free syrup (it's kind of icky but i use just enough for sweetness) and i'm going to try nuts in mine the next time - good idea!

@sophie, Jim and I had your flaxmeal pnck recipe for supper tonight. Me gusto mucho, senorita! It was a hit. I like the little extra flavor from the vanilla and cinnamon. Thanks for sharing!
