Hello Everybody,
I am doing the Atkins diet. I have ordered the book, but in the mean time can anyone tell me a good way to add more fiber to my meals plan? Thank you in advance.

Needing to correct my previous statement. Flax seed, chia and hemp hearts. All will go to the fiber and not counted as carbs. And, of course, your veggies.

Veggies are your friend! I buy bags of cole slaw mix, and add it to chicken soup, instead of noodles,sauté it in butter or bacon grease, and make cole slaw :) I've found that sense I started low carb diet my family and I eat more veggies then most people I know. Just about any veggie tastes yummy sautéed in butter. Most are low carb. Asparagus, zucchini, spinach, broccoli and Brussels sprouts are my family favorites.

Veggie-rich diet, flaxseed and I ex- the butter in favor of olive oil, coconut oil, canola oil. All diets, Atkins or not.

+1 to LuC2's comment. Butter may taste good but it is an unhealthy fat source.

Butter's not an unhealthy fat. Enjoy it! Also, I'll make creamed spinach (with cream cheese & heavy cream). Sliced Brussels sprouts in a little bacon grease with some chopped bacon. My family loves Italian Sausage & Kale Soup (I think I got the recipe from Olive Garden's website, believe it or not - I just don't add potatoes to their Zuppa Tuscano). I will have the muffin in a minute a couple of times a week to add in extra flax seed. I'm not sold on eating a lot of it yet, but I eat some. There's a chia seed pudding recipe on the internet that is really good. Can't remember the measurements but I know it has chia seeds, coconut milk, sweetener, vanilla and cocoa powder and you refrigerate it over night.

What nutritional value does butter have? Just curious.

1 tbsp has 11.5 g of fat

If made from dairy of grass-fed cows, Butter is rich in fat-soluble vitamins, particularly K2 (also A & E). It is also a good source of fatty acid butyrate and another fatty acid called conjugated linoleic acid (which is sold commercially as a dietary supplement for it's effects on metabolism. And it is delicious.

It contains little to no dairy per serving. Its mostly salt and saturated fats in very high amounts, and contains less than 1℅ of the vitamins you listed.

I use Quest bars! Love them..but not sure if they are Atkins friendly? The gal that created these put a lot of thought into healthy ingredients for a protein bar.

A very recent study showed there was "no evidence that eating saturated fat increased heart attacks and other cardiac events." http://well.blogs.nytimes.com/2014/03/17/study-questions-fat-and-heart-disease-link/?_php=true&_type=blogs&_r=0 We need to stop perpetuating these myths and enjoy our butter!
