Sharing a neat idea -- Experimented with my MiM this morning. Since I was almost out of flax meal I filled the 1/4 cup measuring cup with flax meal to the half-way mark, and then subbed the remaining amount with almond flour. Added the rest of the ingredients as usual. I really LIKED it! It had a kinda 'cakey' consistency, too. Tasted really good.

1734 kcal Gras: 131,94g | Prot: 96,86g | Glu: 37,34g.   Petit Déjeuner: Muffin in a Minute, Egg & Sausage Casserole w/ Veggies, butter, truvia, green tea. Déjeuner: Deviled Eggs - Low Carb, cucumber, lettuce, tomatoe, Mozzarella cheese, chicken breast, green pepper, brocolli, olive oil, tap water, chunky bleu cheese. Dîner: water, Cheesy Vegetable Cream Soup, Deviled Eggs - Low Carb, Coleslaw - Low Carb. Snacks/Autre: Pound Cake (Low Carb). plus...

carbs are the same. :) I loved the results of mixing the two...

@Evie, I did that last weekend and added some blueberries...so yummy, kinda like a blueberry muffin. I think the almond flour adds a nice texture as well.

Ditto Evie, I like the mix! I did that with some scones recently & they came out DELICIOUS...I love the texture. I just wish almond flour wasn't so spendy. Have you worked with peanut flour at all? What's the difference?

@Kat, I've never tried the peanut flour. And you are right that the almond flour can be pricey. I probably need to do more price checking and shop around for better deals. I found that it is cheaper at Kroger than WMart (but not by much....). Wondering if I can get it for less than $9 or $10 elsewhere???

I use half flax meal and half Almond flour all the time. I think it has really improved the taste considerable. The Wheat gluten and coconut flour also sound delicious. I'll be giving that a try as well. Thanks for the idea Stef.:)
