Can anyone here tell me why Pho WITHOUT noodles is so darn high in carbs? I can't figure it out. If anyone has restaurant Pho NVs I would be grateful!

Some recipes add sugar to the broth

The recipes I'm looking at have no sugar and almost 20g of carbs! I can't imagine how much sugar it would take to bring essentially chicken soup up that much. I just don't know where the carbs are coming from.
