Supper: 2 small Yukon gold potatoes (220) 2 cups broccoli florets (40) 1/4 cup vegan queso (90) "Mexican street veggies"--1 1/3 cups mixed veggies, 1/4 cup Violife cheddar shreds, 1 tablespoon vegan mayo, Mexican spices (250)
Dessert: 2 vegan cookies (320)
If my math is correct, that's 1122 calories. I can't eat breakfast before a long car trip, so that will just be black coffee. Water to drink all day.
