I am feeling much better today.... but I am still burning boiled eggs.. no not the best cook however I bought the "best ever" spiraling device that can take a vegie and make it into a spaghetti so now I am a happy camper that I have had my spaghetti! :) I just have to work on getting garlic bread worked out... maybe I will work out some kind of zucchini bread, we will see.

For something bread-like (actually surprisingly bread-like) try the oopsie rolls. They are made with eggs and cream cheese and are also low carb. I never make a full recipe because they don't keep well. You can find a lot of comments on cooking technique and storage, though. http://healthyrecipesblogs.com/2013/07/23/oopsie-rolls/

Yes Sarahduke the veggie spiral device is excellent! I purchased mine at Bed Bath and Beyond. I used mine this afternoon to make me a potato, zucchini, and carrot stir fry for lunch today... yummy. Trackin64...I may try the bread you suggest but is their a substitute for the dairy because I cannot have cream cheese.

Oh cool - I saw an ad for the spiral device sold at BB&B and wondered if it was any good. I think I might just have to get one! Alas, I know of no substitute for cream cheese. But if you are eating eggs, another bread replacement is the MIM (muffin in a minute). It resembles whole grain bread and is made with flaxseed meal, an egg, 1 tsp veg oil, dash salt, and 1/2 tsp baking powder. Mix it all up and microwave in a coffee cup for about 1 minute.

This Veggetti is one of the best objects I have ever purchased, I certainly love mine... Bed bath and beyond is the place I purchased mine...I use it often and make my own combo of sauces...using only fresh and wholesome things..Tomatoes etc...it comes with a little instruction and recipe guide...it is awesome.... Also Atkins has a recipe for Zucchini loaf ..it is so delicious...and made with no dairy...

I actually can have eggs... thank you! :) You know I was confused about the eggs in the beginning but when I was researching I found out that eggs are not really dairy... who knew... one more food for me :) happy happy happy!!

Zucchini Nut Loaf Nutritional Information Per Serving: Net Carbs: Fiber: Protein: Fat: Calories: 3.6 grams 1.5 grams 4 grams 10.5 grams 128.5 4 Stars Ingredients: 1 Cup soy flour 1 Cup almonds, finely ground 1 Cup granular sugar substitute (sucralose) 1 1/2 Teaspoons ground cinnamon 1/2 Teaspoon ground nutmeg 1/2 Teaspoon salt 1/2 Teaspoon baking soda 1/2 Teaspoon baking powder 1/2 Cup Vegtable oil 4 large eggs 1 medium zucchini, coarsely grated 1 Teaspoon vanilla extract Directions: Preheat oven to 350°F. Grease an 8x4 loaf pan generously with oil spray; set aside. In a large bowl whisk together soy flour , ground almonds, sugar substitute, cinnamon, nutmeg, salt, baking soda and baking powder. In a medium bowl, wisk together oil, eggs, grated zucchini and vanilla extract. Mix zucchini mixture into dry ingredients until just combined. Pour batter into prepared pan. Bake 45 minutes until golden brown and a cake tester inserted in center comes out clean. Cool in pan for 10 minutes before removing loaf from pan. With a serrated knife, cut into 18 slices for serving.

That re-worked zucchini bread sounds great and I love zucchini bread. I wonder if I could substitute coconut flour for the soy?

Thank you for the recipe and I will be making bread tonight!! Yummy! :) I may try to substitute the soy flour though because my system can not have soy either.... yes I am restricted on many foods...:( but I am working on the foods I can have. :) I will be eating to night.

I use my spiralizer all the time. I like zucchini noodles best, so I need to expand my horizons a little and try some different veggies. Anyone have suggestions?

I have used mine on potatoes, Zucchini, and carrots but using it on carrots will turn your machine orange...lol. I haven't used it on any other veggies yet, but I am doing research. The potatoes specialized fry up nice. :)
