Can you tell I like veggies? Cut up veggies with a lot of hummus and avocado toast. A little light on the protein, but 15.6 grams fiber and I'll make sure to work in a higher protein meal tonight and maybe snack later on roasted edamame

buenitabishop -- is there something that holds you back from eating them? Just curious about what the barrier might be if it's a habit you'd like to develop 😊

I think its a texture thing, I don't like them crunchy or I have to eat it with something else, like a dip or hummus. I have been trying to get better with the veggies, I will eat salad, spinach, broccoli, and cauliflower.

I think I understand, buenitabishop 😊 I actually love the crunchiness, but I'm a nervous chewer. Plus, it's the polar opposite of the horrible overcooked veggies my mom made when I was a kid 🤮 I have my own textural issues, but mine are with meat, so that's one among many of the reasons I'm almost vegetarian. If you're working to include more veggies, hope you find a way to make it work for you! 😁

Do you make your own hummus ? I find it fun and you can cut out so much oil and salt and add great flavors…..

katmm - my husband usually makes ours, but this batch was an impulse buy when I was out at the store because he hadn't made it in a while. I definitely prefer his, but it's more work for him than just a bean dip because he tries to get the skins off the garbanzos for a creamier texture. He does make really good white bean and black bean dips, too, which I love

Sounds amazing I make a lot of my own sauces and dips as well …. Been vegetarian for a few years now trying to clean it up as I became a junk food eater now I’m trying to go 100 % vegan 🌱

I've toyed with the idea of going completely vegan lately, but decided I'm just going to reduce animal products but not eliminate them completely. Vegan foods do constitute the vast majority of my diet these days. I found two great YouTube channels on the subject: Plant Chompers and Nutrition Made Simple. Both focus on the nutrition without the guilt trips. Pretty even handed, and a lot of practical tips. Both can be really funny, too 🤣
