Been struggling to get enough greens in, so made us salads as an afternoon snack. Took an avocado, turned it into a simple guac, and thinned it out enough to serve as dressing. Hubby liked it, as did I :)

Sandra, shirfleur, and buenitabishop -- it was pretty tasty. I need to start looking up some avocado based salad dressings beyond just thinned out guac. I decided not to eliminate oils, although many strict WFPB adherents do, (I'm not 100% WFPB anyway), but I do find I have to limit it to make room for other things, such as nuts and avocados, that I want to include in my diet. Olive oil, in particular, I believe is healthy, but the calories can add up fast

I had a fantastic little dressings chart I got off Pinterest and printed and put on my fridge. not recipes, just combos and benefits. got rid of it when I thought I was getting a new fridge.

Thanks, Katsolo! I'll try to take a look for it. Jengetfit, I should probably be doing that, at least with the spinach. I usually have some bags of frozen in the house and a tub of fresh baby spinach or arugula

Make yourself a bowl, rene! Zapotz -- I've tried hummus on salads, but it hasn't been my favorite dressing. Might give it a go again with the lemon and yogurt. I will say I love slightly thinned out hummus as a pasta sauce. Yum! 😋
