It is a very nice dish but in my opinion it would be even better if you added some carbs, maybe a slice of whole eheat bread. A full meal must contain protein, fats (olive oil etc), carbs and greens. Other than that it looks delicious!

@Maria: vegetables ARE carbs. Grains are nice but unnecessary, especially if diabetes is an issue. The only thing I would change would be to double the broccoli for more low calorie fiber.

@ksa It was pleasant and nearly like a baked potato! Depending on how long you bake it, it will be tough or softer. For me it’s a potato substitute since they really raise glucose higher over a long period of time. Salt, pepper, Cajun spices, and toss in olive oil. Bake 400 degrees for 18m, flip half way through. Peel and remove seeds with a spoon from the butternut squash before cooking. I’m going to add peppers next time, red, yellow, and green!

ksalinas1 many different types of squash with different kinds of sweet flavors and textures... my favorite way to prepare butternut, acorn and spaghetti squash is to roast them.
