I plan meals and bought some cheap divided containers. I meal prep lunches for work and breakfast. Find things you like, that are easy to make ahead. Hard boiled eggs, cheese sticks/slices, cut up veggies, yogurt, etc. I even make bags of grab and go snacks. It takes a couple hours to get it all ready, but it saves time in the morning before work!

It sounds like your schedule is super full! I try to do some prepping on weekends (put grapes and fruit into bags, hard boil eggs, make a large pot of soup, etc.) I cannot prep in the mornings at all. Brain does not work that early 😆. I don’t know if it’s an option for you but perhaps a meal service could help take some pressure off?
As for breakfast, I get that, too. I’m diabetic but naturally fast until lunch time most days because I have no appetite in the AM. I bet the reason you’re feeling hungrier after eating something is just due to breaking your fast. You are turning the metabolism on at that point. I wouldn’t say it’s a bad thing as long as you are able to manage the hunger cues and are not uncomfortable.

I think the short answer for some of us is we're not up against as much as you are! Looks like you're getting some great suggestions. Meals don't have to be elaborate to be healthy, so don't think they have to be

I've never been a breakfast eater either. I'd always gain weight trying to eat 3 or more meals a day.
SUGGESTIONS; Working shift work and raising 4 sons playing multiple sports I had no choice but to prep. On my off day I'd cook several meats (roast, meat sauce, burgers, baked chicken, taco meat), pot of soup, large bowls of salad and fruit salad, and bowls of egg and tuna salads for sandwiches or salad add on. Add bags of apples, oranges and nuts for grab snacks that don't require refrigeration.
Then reheat an entree and a couple veggies for dinner leaving time to relax. Break out your crockpot. Kids & husband's all gotta help everyday if they want to eat!😁

Do you have an instant pot? Mine is literally how I stay going. It will cook fresh chicken in 10in and frozen in 20min. I don’t have time for meal prep either but my instant pot really helps.

Try crockpot meals, chicken, cabbage soup, ect...The wife works several hrs a day & i work 13 aday by the time we come home after workout and such & its ready. I know its hard but hopefully you'll have a few minutes to prep.

I feel for you and back pain. I have the same. Fortunately my husband is a great cook and loves being the chef. We are retired but my back keeps me from doing very much around the house or exercise. I think I’m going to have to hire a cleaner to come once a week. I’m trying to lose weight to take the strain off my back.

U can do hard boiled eggs for first meal some string cheese and jerky a tuna pouch or the pre cooked chicken strips and spinach then have dinner. That’s what I do I try to meal prep but just don’t so I have what I have. Throughout the day. Nothing fancy I eat in my car for two meals outta 3 🤨

Oh and the Fage cups and a fruit cup no sugar added are very easy. Over night oats made w unsweetened almond milk a tbl of pb or honey and you’re good to go!

My husband has Dementia and sometimes I feel I’m the one that has it. I prep my food. I boil a dozen eggs at a time. I also prep skinless chicken for about 4-5 days. This way I don’t eat junk food when I open my fridge. I also IF 16 hrs. It was hard at first . Took me about a week to do it right🤔🥹. 8pm -12noon…

I do meal prep on Sundays. A big pot of soup or curry freezes great, too, so I can have a couple in the fridge and a couple in the freezer. Pack up your lunchbox the night before so you can just grab it the next morning. Also, leave a big bowl & silverware at work so you can just dump a bag of salad mix in (bring your own bottled dressing and leave in the work fridge if you want a lower calorie option) -- Taylor Farms and Fresh Express are my go-to and they're just 3/$10. I make pretty dinners only on days I work from home.

Meal prep on the weekend is key, I will pre cook chicken, wash and chop veggie. I also like to have sautéed peppers, onions and mushrooms in the freezer at all times. Makes it a lot easier to throw a meal together.

Some companies provide prepped meals. You can askmfor help, from someone which seriously cares about you. Start small anad advance as you learn. for keto or low carb my formula is (eggs/cheese/meat/poultry/fish/tofu/beans/lentils)+(yoghurt/kefir/pickles pickled with vinegar with the mother)+(low carb salads, all colored and green veggies)+(cooked veggies and/or mushrooms, we love baked veggie mixes no starchy ones)+(Nuts and seeds as snacks, coconut, avokados+avokado oil, olives+olive oil, butter as essential and healthy fat/oil sources)

Many of my meals are super easy. I do sheetpan meals....a chicken breast with spices sprinkled on, cut up veggies tossed in a little olive oil & sprinkled with seasoning like garlic, black pepper, everything bagel seasoning, etc. 30 minutes in the oven & you have dinner. My go to breakfast is fresh fruit with half a bagel & peanut butter. I cut my fruit in the morning, but you can precut it & dish it out as needed. The same can go for veggies. I buy prewashed lettuce and add a variety of ingredients. If you pop some chicken or salmon on top, it's a meal.

Pre plan all your meals so you only need to shop once throughout the week. Use weekends for longer meals that you can freeze like sauce and soup. Plan meals that are around 30 minutes for the rest of the week. As your freezer gets stockpiled mix those into your weekday routines to have really easy meals that are even shorter.

Frozen lean cuisine go on sale 4 for 10.00, I take the Mac and cheese and add 3oz of ham and sometimes broccoli and it’s quick. They also have good lasagna and beefaroni! Using this app helps too, to balance the macros out. I spend my eve before sleep while watching tv putting in foods I will eat tomorrow and it’s like a video game getting it to balance. Make a lasagna on your day off and cut up and freeze small squares. I love intermittent fasting, but carbs are necessary to keep my metabolism going.. it’s true, I’m still slowly loosing weight on 1500 cal a day.. hope this helps a little.

Some other hacks…add chicken tenders into progreso soups.. or open a can of green beans and sprinkle with either hidden valley ranch powder or white cheddar popcorn sprinkles.

If you have an Insta pot, there are a lot of recipes that don’t take too long. As far as breakfast goes, my two favorite are lower sugar instant oatmeal and Nature’s Bakery fig bars. My hardest meal to eat is lunch. I do like some lean cuisine’s once in a while.

I often use several hours on Sunday’s to prep for the week. I do things like boil eggs for afternoon snacks. Bake a pan of chicken breasts or make a pork roast that can easily be made into multiple meals for the week. I keep a lot of frozen veggies that are quick to add to a meal. My current weekday breakfast is baked oatmeal and Greek yogurt. My baked oatmeal makes 6 servings which takes care of breakfast for the week. I have also gotten better at using my instapot to quick cook frozen meat. Or air frying with the instapot lid.
