I made my keto dough after more than a year. Turned out grest. It's a fail safe recipe due to the high ratio of gluten. It has plenty of fiber too. Though it's highly processed food, so I'm not sure whather we can consider this healthy.

What's in it that makes you consider it to be a processed food? The gluten? There are levels of processing. Even cooking is a type of processing. What I try to avoid is the stuff in the stores with a 40-ingredient list you need a chemistry degree to interpret.

I think the most important thing is to take notice to how your body reacts to this food. For me personally it wouldn't be great, but it's just me and my unfortunate gut health.

Gluten is a lectin (plant based defense against being eaten) and some people with specific mutations can't digest it. For celiac patients it's a poison. And for regular people overconsuming it can cause leaky gut issues. One common issue is about the glyphosate being sprayed on wheat. Its a pesticide which is also an antibiotic which may mess up the gut and microbiome. Our bodies are evolved to take in and process food as a whole. There are many compounds in food which makes them edible and or beneficial. The seperation of elements in whole food might make them harder to digest or less beneficial or even harmful.

Yes, indeed, some people can't tolerate gluten, but there's more scare out there than actual danger to most people. And the lectin threat is even more completely overblown. A lot of people seem to think beans are poison because of lectins, but the longest lived populations usually have a lot of beans in their diets. If your body reacts badly to gluten, by all means don't eat it, but if it treats you fine, I wouldn't worry too much about it 🙂

Btw i think egg white bread recipes are worth checking out (I found it on YT channel Ketogenic Woman) With this one I think there are no gluten or health concerns (if you are good with egg whites ofc)

I tried all kinds of keto bread. I even made tahini bread, but they all just look like bread, but taste way different. Egg whites puff up real nice but after a while the eggy smell starts killing my appetite. If I weren't losing weight but just maintaining it, I would just go for the real thing on occasions. I plan to switch to low carb after that and introduce legumes and moderate amounts of fruit to the diet.

Have you ever tried Carnivore? I've been into Keto for 5 years now, really liked it but have never been able to stick with it - just constantly slept on and off because of the cravings, on keto I basically felt like I'm dieting. And currently I'm on a 3rd week of a 30-day Carnivore challenge, and I honestly don't want this challenge to ever end, because my cravings are gone and I feel genuinely effortlessly good for the first time in my life.

I would like to try the carnivore or lion diet for a few months as an elimination diet to get rid of food sensitivities and heal the gut. But I'm a vegetarian for almost 30 years. I've seen bed ridden people getting back to life with the carnivore diet. For the long run we need some level of plant based food.
