Another great looking (it looks filling) meal! I need to change up my salads a bit more!  

As much as I love vegetables Foody, I still don't want to eat the same garden salad day in and day out. So, I find ways to include more vegetables to reduce empty calories. I think the pork rinds are fewer calories than tortillas, but give that satisfying crunch when I eat tacos.
