anyone got simple soup recipes? I'm really craving soup lately. I'd like to try making cream soups next.

I don't really follow a recipe. I wing it. I make Chicken or Turkey soup with low carb vegetables.(cabbage, mushrooms, cauliflower, broccoli, celery) I add a Pkg of dry onion soup mix to the Chicken broth I either purchase or make. Adjust the liquid based on how thick you like your soup. If you want it creamy add some pureed butternut or acorn squash. I add NO other Starches! And hot sauce for a bite.

My soups tend to be tomato-based: I made one a few weeks ago with ground turkey, canned tomatoes, onion, garlic, carrots, mushrooms, celery, with leftover cauliflower & zucchini. More a tex-mex -chili flavouring this time. (I honestly don't remember everything I threw in there LOL). Was very thick; also used chicken bouillon for stock. Would probably be low-carb? If that's what you're looking for. My next soup will be a lentil veggie with no tomatoes (for a change).

Thanks ever so much for the soup ideas! This is exactly the sort of thing that I was looking for. I'll be trying these very soon. They all sound scrumptious! I find it's much easier to stay the course if you are able to eat foods that are satisfying to your palate. I've stayed off soup during the hot months but now I'm looking forward to trying lots of new ones.

Chicken soup… sauté onions. Add a tablespoon or so of fresh thyme. Add half a small can of jalapeño. Add garlic. Pour in chicken broth. Add cut up carrot,celery and diced potatoes)or omit the potatoes if you like). Add in some corn towards the end. Should simmer for half an hour. Add 1-2 tablespoons of cream (light or heavy). Top with more fresh thyme, green onions and some crumbled bacon.

I forgot to add the pre cooked chicken in the soup obviously but don’t know how to edit🤪

Jalapenos in soup is a wonderful idea! And I can use one of those Costco chickens to make it even easier. I will definitely be trying this. Thanks for the great shares!
