Looks great. I bought the makings of seitan a week or so back but haven't got around to it - I'm not vegan, just fancied trying it and it was cheaper to buy the gubbins than the end product. I guessed I could always try adding the gluten to non-gluten flours such as coconut or almond for keto bakes as an experiment if I don't like seitan
