Ate WAY off script today and paying the price… lethargic, achy… just an overall feeling of BLAH!! But I have no regrets whatsoever! The food that we had today was all sorts of delish. We had
Pork Spare Ribs Carne Adovada (slow cooked shredded pork in red chili) Hot Wings HOT Green Chili Queso Dip blue corn tortilla chips Red Chili Pinto bean and beef stew Posole with pork (more red chili here) Frybread and tortilla Bourbon Spice cupcakes.
All simple fair (except for the cupcakes) but so full of flavors. My team is packed good cooks. I did my very best among such yumminess to keep things under control but still wound up eating about 3x my average daily cals (2800-2900 cal meal) by my best estimates. I was able to forego the things I knew would totally wreck me (the beans, posole, frybread and cupcakes) but had to have the chips to go with the queso.
This has turned into an OMAD day after that feast (more like feeding frenzy :D ) so I’ll have 3 days running of that this week instead of 2. Bottom line is while I indulged myself and stepped outside my plan, it was well worth it to spend the time laughing with folks I spend a big part (60-80 hours a week) of my life with. Tomorrow is right back to my plan, though i probably scale back the meal I had planned, I figure I’ll still be feeling stuffed by noon tomorrow. :D
I hope everyone has had an equally good day and have stuck to your own plans… and if not, don’t worry about it. Don’t beat yourself up, Just get back to what you want to be doing tomorrow!

Thanks much Judy!! Off script eating was totally planned (even knowing I'd be feeling bleh afterward). Not going to pass up enjoying life and good laughs. It was for sure Becca. I am in and from NM, a rez rat from the central part so needless to say both red and green chili are a staple taste for me. My 'diet' really developed around avoiding things that make me feel blah (which is most everything besides meats and leafy green veggies for the most part) but for good times like today, paying the price inflicted by the chips, queso, and beans is worth it.

We all need a day of eating off script sometimes! It's great to indulge but also serves to remind us of why we don't do it daily anymore (the blah afterward)! Glad you have the company of great cooks/co-workers/friends!!

We're in NM too! Actually today is 4 years since we moved from So. Cal. My husband's family has been here for centuries, so we've been coming for years. I have family in El Paso and other parts of Texas, so needless to say, we love being closer to our NM & Texas family. Oh btw, your early birthday lunch made me drool!

:D Very cool! So rare to trip across someone else in one of the most forgotten fly over states in the US! I'm from the rez just south of ABQ (where Bugs always forgets to make a left turn) so needless to say red and green chili runs through my veins. :D

It was for sure. Frybread is just that. a flour, baking powder, salt and water bread dough, rolled out to the size of choice then cooked by frying in 1in or so of Crisco. Best hot right out of the fryer. :D Sopapilla's are similar but mixed with more baking powder. makes them lighter and more poofy. Sopa's are also seen as more of a dessert thing with honey where Frybread is more of a staple bread with the meal. Very much an Native American (or PC term of choice) rez (reservation) food especially in the SW US.
