Down another 0.6 lbs! Which, at my height (5'7.5"), puts me at a BMI of 21.7. Not too shabby! At this point, I'm not expecting, nor would I welcome, larger weight losses than half a pound or so per week. So, I'm tickled pink with just the small change in the scale!

Today is a "rest day" from running, so I'm just going to do the 90-minute P90X yoga workout today. It's virtually no impact on my lower extremities/joints and is really helping with my balance, strength, and stability.

Today I'm also going to try to find time to make a large batch of sprouted lentil, mushroom and zucchini soup to help ease the food prep burden for the week. I'm also going to see if I can make some "salad in a jar"s to lessen the amount of time I'm spending in the kitchen each day! If you're looking to increase your veggie intake and you're unfamiliar with the Salad In A Jar concept, google it. It's fabulous! I have a large pile of roasted beets in the fridge I need to marinate and add to my salads this week, so I'm thinking about making a mandarin, ginger, walnut dressing for the beet salad in a jars. All this food talk is making my tummy rumble! Better shove off to the grocery store and run my errands for the day!

Have a fun-filled and fantastic Friday, Folks! (I do love a little alliteration once in a while!)

good job. it looks like you're at your goal weight!

I am pretty near my goal weight now. Now, it's a matter of shifting my body fat percentage lower and building more muscle. It's a life-long work in progress that continues long after I reach that "magic number" on the scale. And I'm perfectly OK with that! :)

your progress is AMAZING!!!! are you following dr. fuhrman's plan to the T?

I do follow it pretty closely, Tulipgirl. I eat LOTS of fruits and veggies and NO processed foods! But I also can't eat certain fruits/veggies due to inherited food sensitivities like nightshades (goji berries, peppers, tomatoes, potatoes, and eggplants, to name a few.), wheat/gluten (half my family has Celiac disease), and I also avoid ALL GMO's. Dr. Fuhrman knows what he's talking about! I've reversed a really serious auto-immune disease and lost a lot of weight eating this way. My diet is actually pretty simple. Kaiser Permanente has published an online brochure about how to transition to a whole-food, plant-based diet if you're interested. Just google it.

Oh I found salad in a jar this week, what a great concept! No one was selling greens at the market so I have to settle for peppers, tomatoes, and potatoes this week (good thing I'm not allergic to nightshade).

sweet2th so you're vegetarian? sorry i read dr. fuhrman's book a while ago...... do you skip breakfast usually? what times do you eat? your eating plan is very interesting . .. . .i get messed up with fruits, i'm trying not to have too many because of the sugar, they give me a sugar crash; you must look and feel great! such an inspiration to see people who are way ahead of me in their progress!

Good for you on your weight loss! Thank you so much for the tip about kaiserpermanente.org pdf on plant-based diet. I saved it to my computer! :)

I am technically a vegan, since I avoid all animal products with the exception of a little organic honey from time to time. I do not eat breakfast in the conventional sense of the word. I engage in a variation of intermittent fasting (IF) in which I only eat during a 6-hour period of the day. It allows my digestive system a chance to rest and heal and I can stuff my face from 3pm to 9pm, while benefitting from fasting's neuroprotective and cancer-fighting properties. I start with a hemp seed, fruit and green leafy veg smoothie after my afternoon workout and I'm absolutely stuffed to the gills by the time I'm done eating and I easily make it to my 3pm "feasting time", completing an intense workout and without ever feeling hungry. There's an interesting documentary about fasting from PBS with Dr. Michael Moseley you can Google if you're interested in learning more called "Eat, Fast and Live Longer." Also, I'm definitely NOT afraid of fruit! They have so many beneficial properties, antioxidants, polyphenols that protect, nourish and heal the body! Plus, I'd never get through one of my 7-mile runs without 'em! The Kaiser Permanente brochure is a great tool, for sure. I printed one out for my 72-year old mother, who is recovering from a stroke last year. She's doing amazingly well on it! And when it comes to specific recipes, I don't really cook from recipes. I just throw together a little of this and a little of that. It helps that I have a lot of cooking experience, both professional and at home. For this week's beets, it's a combination of some organic mustard, raw apple cider vinegar, honey, black pepper, clementine oranges, walnuts and lots of fresh ginger and garlic all whirled up in a blender. It's delicious! I'm currently working on a list of some of my dressings for my health coaching business and may eventually publish a cookbook. I've learned that a good dressing can make me inhale a mountain of veggies without blinking an eye!
