500 calories is very low, too low. My daughter is anorexic and it started as a control thing. Switch it up but try to keep to RDI within 200+/-. Do other things. Take extra walks, drink more water, anything but starve yourself. In starvation mode your body retains everything as Rockiesfan stated already. It makes your body build it as fat instead of using the energy. So, use the energy and do some crunches, take that walk, add a spin class, heck dance in your living room. But eat.
