Kids will not even think about chocolate chips after biting into these tasty yet nutritious cookies.

- In bowl, beat together butter and brown and granulated sugars until light; beat in egg and vanilla.
- In separate bowl, whisk together flour, oats, flaxseeds and baking soda; stir into butter mixture until soft dough forms.
- Drop by level tablespoonfuls (15 ml), 2" (5 cm) apart, on ungreased rimless baking sheets.
- Bake in top and bottom thirds of 350 °F (175 °C) oven, rotating and switching pans halfway through, until golden, 12 minutes. Let cool on pan on rack for 2 minutes.
- Transfer cookies to rack; let cool. (Make-ahead: Layer between waxed paper and freeze in airtight container for up to 1 month.)

Put a slice or two fo bread slices with the cookies to stay soft.

This recipe as written would need modification to make it Atkins friendly. Crushing the flax seeds, substituting the sugar and flour with low carb alternatives such as splenda and a nut flour instead may work.

Recipe definitely needs modification as many of u have stated but seems to be a good base to work off of. Anyone try to use soy flour for these yet, maybe a half and half mix?

I used splenda & splenda brown sugar blend and I used almond flour/meal-they were very good this way.

Delicious! I kept the flaxseeds whole as roasting them opens them up during the cooking process and adds to the crunchiness. I used 1 egg WHITE in place of a full egg and 1/4 cup DARK brown sugar but no granulated sugar and added chopped walnuts. I will surely make these again. Thanks for sharing!

Yummy ^^. Seems like a really good substitute for the chocolate chip cookies i make.No chocolate in them but i prefer these for an indulgence. (much better for you)
I used everything the same just used milled flax seed 1/3 cup.
