Turkey Enchilada Casserole

Sensational layered tortillas and ground turkey with enchilada sauce and reduced fat cheese.

Ingrédients

  1. In a 5 to 6-quart pan over high heat, stir turkey, onion, garlic, oregano, and cumin in oil until turkey is crumbly and no longer pink, about 4 minutes.
  2. Stir in 1 cup enchilada sauce. Add salt to taste.
  3. Meanwhile, cut tortillas in half. Arrange a fourth of the halves evenly over the bottom of a shallow 3-quart casserole, overlapping to fit.
  4. Sprinkle a 1/4 of the cheese evenly over the tortillas, then top with 1/3 of the turkey mixture and a 1/4 of the remaining enchilada sauce, spreading each level.
  5. Repeat to make two more layers of tortillas, cheese, turkey mixture, and sauce; top with another layer of tortillas and sauce, then cheese.
  6. Bake in a 425° F (210° C) regular or convection oven until cheese is melted and casserole is hot in the center, 18 to 20 minutes.
  7. Sprinkle with chopped cilantro.

I would love to know how many servings this dish makes. Even though it says 301 calories per serving, that doesn't help me know what one serving is (if I don't know how many servings are in the entire dish).

Best recipe on this site just the way it is. Try pairing it with a Black Bean Corn salad. Delicious! I use Preseasoned Italian Ground Turkey and have added this one to the recipe rotation.

Awesome dish and easy to make. My husband and kids said it was a keeper!

Delicious. And it was easy to make. I cut the tortillas in fours and I used all 3 1/2 cups of the enchilada sauce. I didn't salt it though. Adding cheese sometimes makes a dish too salty, so I waited until after i served it up. It was great and I will definitely make it again.

Looks delicious and by the ingredients it must be. Also, if you were to put that in front of me, I would eat at least half of it, probably all if it was still out an hour later. From the looks of the photo and ingredients I'll bet it weighs in at 2700-3000 calories. More than my daily limit. At 301 calories per serving, that means 10 servings per pan. Wish I could do this one, looks so good

Yummy! - Actually better than enchiladas. Yup that's right... I said it. In all fairness tho' I did my own thang with this recipe (hence the 4 stars). I secretly find ground turkey quite bland so I used lean ground beef instead. I also took the suggestion of other reviewers & not only omitted the oregano completely, but added a can of black beans as well as a splash of salsa in my cattle filling. I should also divulge that I hold the opinion that if God had intended for us to eat low fat cheese, He would have created low fat cows - Amen! So, regular moo-y goodness was included in my concoction. I also doctored my store bought Las Palmas enchilada sauce with other goods.... Mmmm, Delicioso! Upon time of assembly, I seemed to be without the appropriate “shallow 3 quart” baking apparatus, so my 13 x 9 Pyrex was lookin’ pretty sweet. I then made the executive decision that 2 layers (instead of 4), topped with another layer of cut corn torts’, enchilada sauce & cheese would be a beautiful thing - It was PERFECT!
