I've officially made it 1 week on making better food choices. I have the house mostly stocked with healthy things. Been staying a day ahead on meal planning too. :) I did buy some Chicken and Roasted Garlic Ravioli the other day, and we'll be having it for dinner tonight with fresh veggies and I might toast some flat bread for a little crunch and to mix things up. Lunch most days is left overs from previous dinners. I try to make extra protein any chance I get. Worse case scenario is 1/2 a pita, meat, a little cheese, and some spinach for lunch. I'm really enjoying the roasted pumpkin seeds and toasted salted soynuts this week as a snack. Really love the flavor of them. I even put some in my yogurt in the morning. :)

I only work til 1pm today, then I go to the big city for my ENT appointment. Might be having my tonsils out this year. They're slowly getting worse and more problematic. So we shall see.

Besides that I'll be running by the Veggie stand near my house for some Cherry tomatoes, cucumbers, and fresh spring mix lettuces before my appointment. It's owned by a Japanese family and you can find some really neat things there. They even have freezers and a refrigerated area some of the things they have. I really would love to try making my own ramen at home. They have noodles in the fridgerator there for it.

Had a good weekend. Didn't get everything I wanted to done. But I ended up doing some more in depth cleaning around the house. My very pregnant friend visited on Saturday, and she was going to spend the night, but she kept having irregular contractions, so she went home. She had her baby Sunday Evening at 7pm. I did feed her some really good food while she was there, and we just talked and relax. :)

My oldest daughter had a friends spend the night, and hang out and play til Saturday afternoon. Then When it was time to pick her up, her mom brought her other 3 kids, so it was a full and busy house for an hour or two. :)

I cooked Chicken and gnocchi soup Saturday night, most of it from leftovers throughout the week. 1 left over chicken thigh, a handful of mixed light and dark meat from rotisserie chicken, 1.25 large chicken breasts I had slow cooked. Chicken stock from the slow cooked chicken too went in. I sautéed celery, onion and carrots in a little butter salt and pepper before adding them to the soup. Let some of the onions caramelize. Maded full use of the spice rack, cracked pepper, and this parmesan bread seasoning, garlic powder (forgot to buy fresh garlic at the store.) It turned out really well. My picky 8yr old even went back for 2nds. :)

Sunday Morning my daughter and I toasted old fashioned oats with a little cinnamon, roasted pepitas in the oven, and had greek yogurt topped with strawberries, pepitas and toasted oats. It was delicious and my daughter really enjoyed helping to make it. :) She's really growing up too fast.

Sunday night I cooked little baby potato medley, beautiful colors. I had marinated a cut of beef over night, and I seared it on the stove top, and finished it in the oven and made salad with a thai inspired dressing (soy sauce, ginger, basil, and some roasted red pepper dressing as a base). It was so good, and I will admit, that I only guestimated my portions in my food journal. My husband finally came home from helping in Southern Florida with Hurricane Irma victims. So we had cause to celebrate....with a generous helping of beef! MMmmmm. lol.

Oh and the scale went down 4lbs on Saturday. I like to weigh in the morning, but I only update the weight tracker every few days or so. I'm probably just going to update it on Saturday or Sunday from here on out. I sleep later those days and weigh in usually lighter those mornings. lol.

So all good things. This next weekend will be filled with Family time, and maybe visiting my friend and her new baby if she feels up for visitors. :) This week will hold an appointment with the ENT about removing my tonsils and possibly fixing my deviated septum later this year. Picking up some clothes I had ordered at the mall. Staying on track with making better food choices, and trying to get some planned exercise in at some point.

I meant to weigh in this morning, but it was waaaay too busy with getting the kids up, fed, dressed and ready to go. Not to mention getting myself ready, oh and letting the dogs in and out. lol My oldest helps with some of this, but I still have to remind her about the time, and to get socks and shoes on.. The 4 month old spit up all over me, luckily it was before I had gotten dressed so only my pjs took damage.

Besides all that it is Friday!! And I saw babied Ducks! :) Really made my morning. Work so far has been quiet and I've stuck to my food goals so far this morning. I go grocery shopping after work today, so going to pick up a few more of my low cal, low fat staples. Sugar free chocolate pudding for the chocolate cravings. Two big tubs of plain non-fat greek yogurt, some frozen mixed berries and peaches. I love to make greek yogurt smoothies either for snack and occasionally for lunch. I think the yogurt might pair well with honey toasted soynuts that I've been snacking on today too. Maybe make up some soynut, toasted oats, and toasted pumpkin seeds to top the yogurt with in the morning, it would be cheaper and healthier than the chobani flips. The flips are really convenient though for me. They're a good grab and go item.

My daughters and I walked 2 blocks to the neighbors for my oldest to play with my neighbor's grandkids while the baby and I visited. :) Only reason we could visit was because I put chicken in the crock pot on my lunch break, so to finished dinner all I had to do was prep veggies. And I did make a microwave potato that was good too.

Plans for this weekend: Pick up online orders at the mall. Take a walk with the girls, possibly at a park. Paint the rails on the porch, weather permitting. All routine household chores. Try the new scratch filler/markers on the table and see how well they work. Prep snacks and food for next week.

Just starting back, this time last year I had just confirmed my pregnancy, and I gave birth to a sweet happy baby girl on May 5th earlier this year. I've been struggling with my blood pressure and stress. Lots of medication changes. I've been trying to balance being a Mom to two girls, and working full time, and it has been rough.

So I'm trying to slowly ease my eating habits back to where they need to be, watching portion sizes, and adding in lots of veggies. Also cutting the junk. I did have a sausage biscuit this morning...but that's a rare thing since I got out of the house super early and had the time to do so. Going to make better choices the rest of the day. I'm having left over chicken thighs that I baked last night, and they are quite frankly scrupdiddlyuptious. Higher in fat than I like, but loads of flavor. Salad on the side. :) Still trying to decide on dinner tonight, I know I'm putting chicken breasts in the crock pot and slow cooking them on my lunch break. Need some sides. Possibly a salad of broccoli, tomatoes, carrots and cabbage.

Next step will be to find time for exercise. I'm thinking it'll have to be early in the morning or possibly stealing 30-40mins after dinner before I have to put kids to bed. I usually go to sleep not long after they do. Once the weather cools down a bit more, I think the girls and I might start taking a walk in the afternoon, after homework is complete.

Not sure what the scale is at right now. Woke up with a sore throat sunday morning, and put it down to drinks and laughter the night before. Went for a walk in 40 degree weather that morning. Got extremely dizzy and light head the last 1/2 mile. Pushed through it and made it back home. Monday woke up with my throat feeling livid and angry, body aches, and just general nasty feeling. My coworkers sent me home as soon as I got to work, then I went to the doctor later that morning. I thought it was Strep, the doc thought the same til the throat swab came back negative. So a very bad bacterial infection. I did not eat well Monday at all, and Tuesday was not overy great either... chocolate and pizza on Monday..... comfort food. I did have 2 biscuits, and soup on Tuesday..then made brownies to test the design for my daughters bday party cake later this month. Very cute...and tasty. ;) I haven't over indulged, but I did have a couple tastes. I will weigh in Saturday, and I'm really hoping that I'll be back on track, and the scale will be down. One can hope. I'm very tired today, but I did make it to work today and have been sticking to my eating plan so far today. So wish me luck. I struggle with my eating goals when I'm unwell and exhausted apparently.
