Eggplant Pizza

You won't miss the crust in this tasty low carb pizza.

Ingrédients

Directives

  1. Slice eggplant to about 1/4" thickness. Sprinkle both sides with salt and let sit and drain in a colander for 20 minutes to reduce bitterness.
  2. Mix herbs and spices in with the tomato sauce (unsweetened). Shred cheese.
  3. Drizzle olive oil on a baking sheet. Place eggplant slices on the baking sheet, they can be touching. Spread a small amount of tomato sauce on each slice.
  4. Add any of your other favorite pizza toppings. Sprinkle cheese on top.
  5. Bake at 350 °F (175 °C) until edges or cheese are slightly brown. About 20 minutes.

This is similar to a recipe I have where you slice the eggplant, dip it in egg whites and sprinkle bread crumbs on either side and roast it in the oven on a baking sheet before topping with sauce and cheese. This helps the eggplant have a nicer texture; awesome pizza hack though!

I added a little sweetener to my sauce and they were well liked both myself and spouse. Found they tasted even better cooled a bit.

I think this is a great recipe. I wish the recipe would have said to RINSE the eggplant before putting it on the baking sheet. I patted it dry and removed some of the salt but it should be rinsed as my first attempt was waaaaaayyyyy to salty! I will make this again and it was good in spite of the little mishap. I used fresh garlic, onion and tomato and it was tasty. I'm sure next time it will be great.

This was great! I love eggplant and I love pizza! The only change I made was, i used garlic salt instead of regular salt, it added a nice garlic flavor I love!

Great my husband made "sandwiches" out of them but being on WW I enjoyed them and only 5pts each! Yummy!! and satisfying.

Tried this tonight, and it was ok... There are a few things I'll change next time we have this. I think I made my slices to thick. I also think that I didn't let it sit in the colander for long enough. I'll take the peel off next time, and try baking it for 10 minutes then taking it out to put the toppings on and putting it back in for the rest of the time. It was a little too slimy.

We love it: eat the whole dish just the 2 of us!! I added some chiliflakes in the tomato-sauce and 2 finely chopped anchovis. It added a lot of richness to the sauce (you don't taste the fish at all) and sprinkled the cheese with some pine-nuts. Absolutely fab.

I was skeptical, but it tasted great! My four-year-old, who has celiac disease, loved the idea of pizza. He gobbled it right up.

I have made this in the past (and love it!!!) I used diced fire roasted tomatoes instead of sauce. To save on calories I used an olive oil spray and spray it directly on the eggplant slices instead of the pan, then they don't absorb any extra oil. The juice from the tomatoes keeps the eggplant plenty moist. It's good with parmesan too - just omit any extra salt.
