Mini Cocoa Swirl Cheesecakes

A low fat, low carb recipe that's great for a special occasion or just for snacking on.

Ingrédients

Directives

  1. Pre-heat oven to 350 °F (175 °C). Line 6 regular size muffin cups with paper foil liners.
  2. Blend cream cheese and ricotta in a food processor until creamy. Add sugar substitute, egg, egg yoke, vanilla and process until smooth.
  3. Divide 1 cup of batter among the 6 muffin cups. Add cocoa powder to the remaining batter and combine. Drop a heaping tablespoon of the cocoa batter into each muffin cup and gently fold to form a swirl.
  4. Place the muffin tin in a large roasting pan and fill the pan with hot water to reach half way up the muffin tin. This is called a bain marie.
  5. Bake until the cakes are puffed and set, 18-20 minutes.
  6. Remove from the bain marie and cool at room temperature.
  7. Refrigerate until chilled, about 2 hours. Bon Appetite!

too many carbs for a keto snack

I did not try this, but if your focus is on carbs, I'd substitute the part skim ricotta and low fat cream cheese to full fat on both of them. You'd save 6 carbs minimum and I'll bet that they will 'fluff' better. Just an idea...as I live on low carbs. I might try these for a treat!

I thought these were great but a pinch of salt is needed and I cooked mine at least 45 min.They were great.I will make again for sure,especially since the family ate them when I wasn't looking.Kids!!!!

I followed the directions to a T and they didn't come out as expected at all. I was really disappointed. After baking for 35 yes 35 min!!! they were still really wet and didn't puff at all. Even after I took them out the mooshy wet cakes tasted like gross hot chocolate cheese moosh.

My cakes didn't "puff" at all...they tasted pretty good, but they weren't quite firm enough...hmmm?
