Asian inspired chicken salad that you can also wrap in fresh lettuce.

- In a medium bowl, combine the bamboo shoots, water chestnuts, hoisin sauce, peanut butter, soy sauce, hot-pepper sauce, and sugar substitute. Mix well. Set aside.
- Mist a large, non-stick skillet with olive oil spray and set over medium heat. Add the garlic and cook for 2 minutes, or until fragrant.
- Add the onion. Cook, stirring occasionally, for 3 to 4 minutes, or until tender and just starting to brown.
- Increase the heat to medium-high. Add the chicken, ginger, and salt. Cook, breaking the chicken into small chunks, for 3 to 4 minutes, or until no longer pink.
- Add the reserved bamboo shoot mixture. Cook for 2 minutes, or until hot.
- Stir in the sesame oil. Remove the pan from the heat.
- Spoon the chicken mixture, evenly divided, into the lettuce leaves. Set on a serving dish.
- Top with green onion and cucumber. Serve immediately.

Some of the ingredients are a little high for Atkins Induction, but it would be fine for Maintenance. OWL - depends on how you handle carbs. The nutrition facts show 29.47 grams of carbs for each serving and thats too much for induction. I'd leave out the hoisin sauce and the water chestnuts at least. (see below) The hoisin sauce is 7 grms of carb for 1 TB It says it makes 4 servings so divide the carbs up Bamboo is 4 gram for 1/2 cup Water chestnut is 15 grams for 1/2 cup And the pnut butter is 6 grams for 2 TB

The three of us loved it.....so tasty. I used a locally produced habanero-mango hot sauce that made the artificial sweetener unnecessary. Great light meal, fantastic favors! This will be a regular item from now on.

I made this last night with a few variations to suit my families taste buds. Everyone loved it. I mixed sauteed zucchini in with the chicken mixture rather than the bamboo shoots or water chestnuts. And instead in adding the artificial sweetener, I added honey. I also served mine over rice since I didn't have the bib lettuce on hand. I will certainly make it again and even bring as an appetizer to any functions. WE LOVED IT!!

Delicious!! I wasn't sure two wraps would be enough, but the serving size is very generous and makes two very healthy sized lettuce wraps. I am the only one who will eat this, so I have 3 servings left over for the rest of the week. Yippee!
