Evaporated milk is too high in calories for any diet. Why use milk at all?
I make this dish with just egg beaters and whole wheat diet bread. total calories with maple farms lite syrup = 215

I have made this a lot lately. Once you get into the groove, they are super easy to make and the picture is becomes very easy to duplicate. It is all about battery consistency, pan temperature, and how long you cook it on the first side. I would agree on making slight changes to cut the calories. I also add a 1/4 scoop of protein powder to increase the protein content.

I think this recipe is pretty good but could be pared down with soy or almond milk and instead of Splenda use Stevia.

It is not suitable for induction because it is a sweet. But to lessen the carbs, substitute 6 tablespoons of heavy cream for the evaporated milk and instead of the splenda packets, use 3 Splenda mini tabs or to taste. I crush them. (They look like sacchrin and come in a small plastic shaker. This will cut the carbs considerably. (if you are wanting to cut down on fat, use 3 tablespoons or cream and 3 table spoons of water.
It takes quite a bit of practice to be able to flip the crepes in a regular pan.

That picture is so misleading. These are really difficult to fold. I made them with 2 eggs and 3 oz 1% milk and they really satisfied my sweet cravings. Too much cinnamon though

Yum! I also used 2 eggs and 3 oz. skim milk. I used about 2 tsp. regular maple syrup and this dish hit the spot! If you only use a little syrup it's like 40 cal. or less and real maple syrup is actually good for you! This tasted just like french toast but without all the calories!
