One full week without (almost all) dairy. It's turning out to be less difficult than I thought (tho as I sliced up some cheddar for the kids for snack, I had to be careful not to eat it!) Coconut oil on low-carb toast, with just a touch of salt, is actually pretty good, btw!

Not losing weight rapidly, but it seems to be heading in the right direction. Since the weight gain had been rapid to the point of alarming, I'd say that's a good thing.

I did notice something today, though: My ankles and fingers were less swollen. I've always been susceptible to "bloat" especially in my ankles, but along with the weight gain, this too was concerning. So it's really nice to see that subside! Plus, for the first time in a long time, my clothes felt less tight. Not sure what's going on -- if it was truly water weight, I'd expect a rush of weight loss to go with it. But it's nice to *feel* a bit thinner, nonetheless!

So ... dairy. I hardly knew ye. Looks like I'll be steering clear of dairy for awhile.

OK, so for the past few days I've really lowered my dairy intake to almost 0. I say almost, because I've decided not to worry (yet) about dairy included in some family recipes; but I'm cutting back on those recipes, not spreading any butter or cream cheese, not putting heavy cream in my coffee, no cheese on my sandwiches or in my eggs, and substituting coconut oil for butter in pretty much everything.

I'm feeling pretty good about this so far. My weight is down a little (we'll see how that goes over time, but it's still encouraging to not be gaining!), and I actually feel satisfied, even *grateful* where food is concerned. It's a nice change. I hope it holds up.

I came up with a non-dairy coffee creamer, too. It's not nearly as delicious as heavy whipping cream (what is??), but I'm finding it satisfying. I've added a little sweetener, a little xanthan gum, and some coconut oil to almond milk (I was making my own cashew milk, per some recipes I'd seen online, but the already-made almond milk seems fine), and it's creamy enough, and tasty enough, and definitely filling enough, to work for me. (I don't sweeten my coffee, but hwt is naturally sweet and I felt it needed the flavor boost. I also felt it needed the added fat to make it satisfying and filling. The xanthan gum is to make it a little thicker and add to the creamy sensation.)

So maybe there's something to the dairy thing, I dunno. The fact that I really didn't want to give it up (along with noticing that I had a hard time with overindulgence of cheese) is actually a sign to me that my body wasn't dealing with it well -- kind of like my "love" of bread and sugar. Once it's gone, I don't miss it, and can see how the cravings were sabotaging me. Maybe that's how this dairy thing will work out, too.)
